Red, White and Blue Watermelon Salad

Refreshing and vibrant, this watermelon salad will brighten up your 4th of July table. Combining juicy watermelon, tangy feta cheese and fresh mint, it has a delightful balance of sweet and savory flavors. Dive into this easy-to-make recipe and savor the taste of summer in every bite.

Ingredients for the salad

  • 1 watermelon for around 5 cups of diced or cut out chunks (a “personal size” watermelon will do the trick)
  • ½ cup of feta cheese crumbled or cubed
  • ½ cup of fresh mint leaves cut into strips
  • 3 cups of blueberries

Ingredients for the dressing

  • 3 tablespoons fresh lime juice
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons honey
  • ½ garlic clove, minced
  • Kosher salt and black pepper to taste

Directions

Make the dressing by whisking all of your ingredients together, then:

  • Dice the watermelon into cubes, scoop into balls with a small melon baller or cut into stars
  • Add the blueberries and feta
  • Toss with the mint leaves and dressing

Noshing Notes: This is a versatile salad, so you can add avocado, red onion or sesame or sunflower seeds to it. You can also swap the dressing for balsamic and the mint leaves for basil leaves. Be creative!
